HISTORY:
Land developer George Merrick’s vision of Coral Gables as a stately suburb evoking the best of Mediterranean architecture was executed to perfection in The Biltmore. In 1924, Merrick joined forces with Biltmore hotel magnate John McEntee Bowman at the height of the Florida land boom to build "a great hotel...which would not only serve as a hostelry to the crowds which were thronging to Coral Gables but also would serve as a center of sports and fashion.”
Bowman contracted with renowned architect Leonard Schultze and S. Fullerton Weaver, a contractor and developer. The team had already designed New York City’s Grand Central Terminal, and the famed Miami Daily News Tower (now known as the Freedom Tower).
On January 15, 1926, The Biltmore Hotel debuted with a magnificent inaugural that brought white-collared well-wishers down from northern cities on trains marked "Miami Biltmore Specials." Lit for the first time, the Giralda tower could be seen from miles around. Champagne corks popped as guests foxtrotted to the sounds of the Paul Whiteman orchestra. Fifteen hundred guests attended the opening dinner-dance that night. Today, the Biltmore is widely recognized as one of the world's leading resort hotels.
A DUFFER'S PARADISE:
Adjacent to the hotel is a 6,700-yard, 18-hole, par-71, championship golf course designed by world-renowned golf course architect Donald Ross. The course provides preferred daily tee times for hotel guests. The John Pallot Golf Academy is a recent addition to The Biltmore’s golf program. This first-class teaching facility offers in-depth personal instruction with one- to three-day schools, customized clinics and tailored individual and group programs. The Academy is led by John Pallot, one of the most respected P.G.A. professionals in South Florida, and teaches all of the fundamentals necessary to become a better golfer, plus the mental approach to the game as well as on-course management. The Academy uses the latest state-of-the-art digital video swing analysis equipment, and a full practice facility, private instruction, golf academy, equipment rentals and a pro shop featuring the latest in equipment technology and designer apparel are also available. Corporate groups can organize tournaments and preferred group tee times through the Biltmore’s Concierge. Uniformed bag attendants, curbside bag drop and valet service are available seven days a week.
SUPERB OUTDOOR AMENITIES:
At 700,000 crystalline gallons, the pool ranks as the largest hotel pool in the continental United States. A frequent backdrop for movies, fashion spreads and video shoots, it has become a singular image of South Florida elegance. Encircling the pool are ten newly-refurbished cabanas set amidst lush palms, bougainvillea and hibiscus. Each well-appointed unit features elegant teakwood chaises and loveseats, banana leaf ceiling fans, lounge chairs for sunbathing, and outdoor rain showers, along with a host of amenities.
The pool’s one-time diving platform has been converted to a multi tier waterfall. The 23,000 sq. ft. pool continues to delight hotel guests and visitors alike. The Biltmore Tennis Center features 10 beautifully maintained, lighted courts. Court times can be reserved through the Concierge desk. Tennis instructors are available to schedule private lessons.
TOP-DRAWER CUISINE:
The Biltmore’s fine restaurants and outstanding cuisine have made the hotel an attraction among gourmands from across the world. The Biltmore is known locally, nationally and internationally as a Mecca for both formal and casual dining alike.
The Biltmore’s culinary team, by invitation, prepared a dinner at New York’s James Beard House. Following culinary stars including Daniel Boulud, Emeril Lagasse and Charlie Trotter, the Biltmore chefs were selected for their “innovative wine program and top-rated cuisine,” according to James Beard Foundation president Len Pickell.
The Biltmore's signature restaurant, Palme d’Or, brings a taste of France to Coral Gables. Since taking the Palme d’Or’s helm, Chef Ruiz has won accolades for his ingenious interpretation of French Nouvelle Cuisine. Ruiz’ award-winning cuisine has “raised the standard” on the South Florida culinary scene, according to the Miami Herald, which has twice ranked the restaurant as “exceptional.” Florida Trend Magazine described Palme d’Or as “the best French restaurant in the state and one of the best in the country,” and Florida Trend Magazine has awarded Palme d’Or its prestigious Golden Spoon Award.
In the diner’s paradise that is Coral Gables, The Biltmore is exemplary for its variety of dining options, its stellar chefs and its outstanding cuisine. From sophisticated dining in Palme d’Or to a casual snack by the pool at Cascade, or a sumptuous meal at the Italian-influenced Fontana Restaurant, the Biltmore offers something for everyone.
