Hotel’s signature restaurant unveils details of its Taittinger Champagne Dinner, Fourth of July
and Bastille Day offerings, and a curated summer tasting menu

CORAL GABLES, Fla. (June 1, 2017) – The Biltmore Hotel’s award-winning, signature French restaurant Palme d’Or is kicking off the summer season with a variety of culinary offerings that, like the season, will leave guests wanting more. Expertly curated by Michelin starred Executive Chef Gregory Pugin, each course reinterprets classic French fare through the utilization of modern culinary techniques.

Taittinger Champagne Dinner
On June 15, Chef Pugin and the expert sommeliers of Taittinger Champagne House will collaborate on an unforgettable night of true elegance. The menu will feature five courses of Palm d’Or’s fresh, local and sustainable cuisine and will be specially paired with wines from the Taittinger’s collection.

The Taittinger’s are one of the few family-owned and operated Champagne Houses, distinguished for their extensive vineyards of 752 acres, including their prestigious Grand Cru vineyards. They have the highest-quality production that exceeds the minimum aging for all cuvées with a high percentage of estate grapes using the most environmentally-friendly techniques. They are critically acclaimed with consistently outstanding scores (90+) and have worldwide recognition among connoisseurs.

Dinner will begin promptly at 7:00p.m., and starts at $65 for Biltmore Members and $75 for non-members.

Fourth of July
Palme d’Or goes all-American this Fourth of July with a special one-night-only, three-course American gourmet tasting menu with a classic French twist. Priced at $55 per person, the delectable menu includes:

Celebrating his beloved France’s Independence Day, Chef Pugin has created a menu that offers guests a taste of his childhood, while using fresh, local and sustainable ingredients. The sixcourse menu, priced at $85 per person, is exclusively available on July 14, and includes:

Biltmore Summer Tasting Menu
This season, Biltmore Members will also get the opportunity to discover the unique sensory and culinary experience of Palme d’Or at a special price every Tuesday and Wednesday. Each week, Chef Pugin will unveil a very special four-course tasting menu priced at $52 for Biltmore Members and $65 for non-members.

Born and raised in the southwest region of France, Chef Pugin quickly realized his passion for cooking at an early age and began studying under some of the greatest master chefs in France. In 2002, acclaimed Chef Joel Robuchon asked Pugin to assist in opening eight restaurants around the world, including locations in Paris, Monaco, and Tokyo. After opening L’Atelier Joel Robuchon in New York City, Pugin remained at the restaurant as Executive Sous Chef for two years. He also served as Executive Chef at Veritas in New York and Le Cirque in the Bellagio, before joining the Biltmore’s Palme d’Or in 2013.
